Vegetable pasta

  • Macaroni (400g)
  • a few tablespoons of oil
  • 2 zucchini
  • 1 eggplant
  • 2 red peppers
  • 1 purple onion
  • cooking cream (500ml)
  • salt
  • pepper
  • shallot
  • sweet red pepper seasoning

-In a saucepan or deep frying pan put the oil to warm up. Chop onion into ribs, zucchini and eggplant crosswise in half and then in half-rings.Put the vegetables in the pan on a low heat.  Add a little water and let it simmer for a little bit. In the meantime, put pasta to cook and chop peppers. Put peppers in the pan. Leave that for another 10 minutes.  When the  pasta is cooked, add it in a pan with vegetables and pour in cooking cream. Spice it and leave a few minutes until everything is combinaded. Remove from heat and serve.
